The best Indian food in Las Vegas has always been welcoming to vegetarians and vegans. With lentils, vegetables, and spices at the heart of so many dishes, there’s always something flavorful and satisfying to enjoy. At Rutba Indian Kitchen, the menu celebrates this tradition with plenty of plant-based and vegetarian-friendly options. Even if you’re not usually a vegetarian, these dishes at the best Indian restaurant in Las Vegas are so flavorful that you might just fall in love with them.
Vegetarian Appetizers Worth Starting With
To start your meal on a light yet flavorful note, the Vegetable Samosa is the ultimate starter. These crisp, golden-brown pastries are hand-filled with spiced potatoes and green peas. Served hot, they’re crunchy on the outside, soft on the inside, and absolutely comforting.
For something a little more indulgent, the Samosa Chaat takes the classic samosa to another level. Here, the samosa is broken down and topped with chickpeas, yogurt, chutneys, and spices, creating a sweet, tangy, and spicy explosion of flavors. Similarly, the Tikki Chaat offers a potato-and-lentil patty served with chickpeas and chutneys. Both dishes showcase India’s love for street food while offering a balance of textures and tastes.
For a burst of tangy, spicy fun, Pani Puri is always a must-try. These crispy, hollow shells are filled with tangy, spiced water that bursts with flavor as soon as you bite into them. It’s an experience as much as it is a dish. For fans of Indo-Chinese flavors, the Gobi Manchurian—fried cauliflower tossed with garlic, onions, and bell peppers—is another favorite. It’s savory, slightly spicy, and perfect for sharing.
Hearty Vegetarian and Vegan Entrees
Vegetarian and vegan mains are where Rutba truly shines. Take the Dal Makhani, for instance. Made with black lentils slow-cooked overnight with ginger, garlic, and tomatoes, it’s rich, creamy, and incredibly comforting. If you prefer something lighter, the Yellow Dal Tadka is a vibrant dish with yellow lentils finished with a tempering of garlic and spices. Vegans can request this without butter, making it a guilt-free yet flavorful choice.
The Chana Masala is another standout. Chickpeas are simmered in a tangy tomato and onion gravy, perfectly spiced and hearty enough to be a complete meal with rice or bread. For those who love vegetable-forward curries, the Aloo Gobi—a simple yet iconic combination of potatoes and cauliflower cooked with spices—is a classic. Similarly, the Bhindi Masala highlights okra sautéed with onions and tomatoes, while the Hari Bhari Sabzi brings together a medley of fresh vegetables in the chef’s special sauce.
On the richer side of the menu, there are dishes like Malai Kofta, where vegetable and cheese dumplings are simmered in a creamy nut-based gravy. Paneer lovers will enjoy options like Paneer Tikka Masala, Shahi Paneer, Paneer Do Pyaza, or Saag Paneer, each showcasing homemade Indian cheese in unique gravies—creamy, spiced with onions, or blended with spinach. For something more rustic, the Mattar Paneer, made with peas and paneer in tomato sauce, remains a homestyle favorite.
Rice Specialties
No Indian meal feels complete without rice, and Rutba’s menu has plenty of comforting options. Vegetable Biryani is a fragrant one-pot dish that combines long-grain basmati rice with vegetables and aromatic spices. It’s hearty enough to stand alone yet pairs exquisitely with raita or curry.
For something simpler, Jeera Rice—basmati rice cooked with cumin seeds—is a subtly flavored dish that complements any curry. The Yellow Turmeric Rice adds a touch of color and warmth, with basmati rice lightly tempered with turmeric for vibrant flavor.
Freshly Baked Indian Breads
One of the joys of eating the best Indian food in Las Vegas is pairing curries with freshly baked bread straight from the clay oven. At Rutba Indian Kitchen-the best Indian restaurant in Las Vegas, the Plain Naan is soft and pillowy, perfect for scooping up gravies. Adding a delicious burst of flavor, Garlic Naan with garlic and cilantro remains a crowd favorite. The Onion Kulcha adds a savory twist with stuffed onions, while the Tandoori Roti is a whole wheat option that also happens to be vegan.
Vegans can also request naans and rotis to be prepared without butter or ghee, making them an easy pairing for any plant-based entrée.
Accompaniments
Sometimes, it’s the little things on the table that make the meal feel complete. Masala Papad is a light and crunchy snack—crispy lentil wafers sprinkled with spices and served with chutneys. The House Salad with fresh greens, cucumbers, and onions offers a refreshing bite between rich dishes, while the Desi Salad—just onions, chilies, and lemon—adds a fiery zing. Vegan diners will also love sides like Mango Chutney and Achar, which bring bursts of sweet, sour, and spicy flavors to the meal.
Sweet Finishes and Drinks
Though many Indian desserts are made with milk, they remain a delightful treat for vegetarian diners. Classics like Gulab Jamun, Gajar Halwa, and Kulfi (in flavors like mango, malai, or pista) offer the perfect sweet ending to your meal. Pair them with a hot cup of Masala Chai or cool off with a Mango Lassi.
For vegan-friendly drinks, options like Rose Milk (ask with plant-based milk if available), Nimbu Pani Soda, or sparkling waters like Perrier and San Pellegrino are light, refreshing choices.
